Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a large bowl, mix 3 cups of all-purpose flour with 2½ cups of full-fat Greek yogurt until a shaggy dough forms.
Transfer the dough to a lightly floured surface and knead for 2–3 minutes until smooth.
Let the dough rest for 5–10 minutes to relax the gluten.
Divide the dough into 8 equal pieces and roll each piece into a smooth ball.
Let the dough balls rest for another 10 minutes to help with shaping.
Use your finger to poke a hole in the center of each dough ball and gently stretch to form a bagel shape.
Place the shaped bagels on the prepared baking sheet, leaving space between them.
Brush the tops with whisked egg to create a shiny, golden finish.
Sprinkle with everything seasoning or other toppings as desired.
Bake in the preheated oven for 20–25 minutes until golden brown.
Remove from the oven and let the bagels cool on a wire rack for 15–20 minutes before slicing and serving.
