Ingredients
  

Base Ingredients

  • 3 cups breakfast potatoes (frozen, homemade, or leftover)

Protein Layer

  • 4 sausage links
  • 4 strips bacon

Eggs and Cheese

  • 1 tablespoon milk or water (for fluffier eggs)
  • 2/3 cup shredded cheese (cheddar or your favorite blend)
  • Salt and black pepper to taste

Instructions
 

  • Prepare or reheat 3 cups breakfast potatoes until crispy.
  • Chop 4 sausages + 4 bacon strips; cook sausage 1 min first, then bacon until crispy.
  • Whisk 4 eggs + 1 tbsp water or milk, season with salt & pepper, cook over medium heat.
  • Sprinkle 2/3 cup shredded cheese on eggs, cover for 1 min to melt.
  • Divide potatoes into 2 bowls, top with eggs, then sausage and bacon.
  • Add green onions, avocado, salsa, or your favorite toppings. Enjoy hot!
