Ingredients
  

  • 1 English cucumber
  • 8 oz imitation crab meat, chopped (real crab can be used if preferred)
  • 3 green onions, thinly sliced
  • 1 avocado, sliced

Flavor Enhancers & Toppings

  • Soy sauce, to taste
  • Spicy mayo, to taste (store-bought or homemade*)
  • Kosher salt, to to taste
  • Black pepper, freshly ground, to taste

Instructions
 

  • Thinly slice cucumber using a mandoline or sharp knife; place in a bowl.
  • Lightly salt cucumbers (optional), let sit 5 mins, then drain excess water.
  • Add chopped imitation crab and sliced green onions to the bowl.
  • Add soy sauce, spicy mayo, salt, and pepper to taste.
  • Close lid and gently shake bowl to mix everything evenly.
  • Taste and adjust seasoning if needed (more soy sauce or mayo).
  • Top with avocado slices.
  • Drizzle extra spicy mayo or soy sauce if desired.
  • Garnish with sesame seeds, pickled ginger, wasabi, or soy glaze.
  • Serve immediately or chill; add avocado and garnish just before serving if prepping ahead.
