- 1 English cucumber
- 8 oz imitation crab meat, chopped (real crab can be used if preferred)
- 3 green onions, thinly sliced
- 1 avocado, sliced
Flavor Enhancers & Toppings
- Soy sauce, to taste
- Spicy mayo, to taste (store-bought or homemade*)
- Kosher salt, to to taste
- Black pepper, freshly ground, to taste
Thinly slice cucumber using a mandoline or sharp knife; place in a bowl.
Lightly salt cucumbers (optional), let sit 5 mins, then drain excess water.
Add chopped imitation crab and sliced green onions to the bowl.
Add soy sauce, spicy mayo, salt, and pepper to taste.
Close lid and gently shake bowl to mix everything evenly.
Taste and adjust seasoning if needed (more soy sauce or mayo).
Top with avocado slices.
Drizzle extra spicy mayo or soy sauce if desired.
Garnish with sesame seeds, pickled ginger, wasabi, or soy glaze.
