- 1 medium yellow onion, chopped (about 1 cup)
- 2 ribs celery, chopped (about 1 cup)
- 2 large carrots, peeled and cut into 1/3-inch pieces (about 1 cup)
- 4 garlic cloves, minced
- 8 cups chicken stock
- 2–3 cups shredded cooked chicken (rotisserie or leftover chicken works well)
- 1 pound orzo pasta
- 1 tablespoon minced flat-leaf parsley
- 1 teaspoon sea salt, plus more to taste
- 1 ¼ teaspoon garlic powder
- 1 teaspoon Italian seasoning
- ¼ teaspoon freshly cracked black pepper
Heat olive oil in a large pot over medium; add onion, celery, carrots, and ½ tsp salt, and sauté until soft (about 7 min).
Add garlic; cook 1–2 min until fragrant.
Pour in chicken stock; bring to a boil.
Stir in shredded chicken and orzo; reduce heat to medium.
Add parsley, remaining salt, garlic powder, Italian seasoning, and black pepper; mix well.
Simmer uncovered, stirring occasionally, until orzo is creamy and veggies are tender (about 20 min).
(Optional) Stir in Parmesan, cream, greens, or lemon zest at the end for extra flavor.
Serve hot, garnished with parsley and more Parmesan if desired.
