Ingredients
  

  • 1 tablespoon extra-virgin olive oil
  • 1 medium yellow onion, chopped (about 1 cup)
  • 2 ribs celery, chopped (about 1 cup)
  • 2 large carrots, peeled and cut into 1/3-inch pieces (about 1 cup)
  • 4 garlic cloves, minced
  • 8 cups chicken stock
  • 2–3 cups shredded cooked chicken (rotisserie or leftover chicken works well)
  • 1 pound orzo pasta
  • 1 tablespoon minced flat-leaf parsley
  • 1 teaspoon sea salt, plus more to taste
  • 1 ¼ teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon freshly cracked black pepper

Instructions
 

  • Heat olive oil in a large pot over medium; add onion, celery, carrots, and ½ tsp salt, and sauté until soft (about 7 min).
  • Add garlic; cook 1–2 min until fragrant.
  • Pour in chicken stock; bring to a boil.
  • Stir in shredded chicken and orzo; reduce heat to medium.
  • Add parsley, remaining salt, garlic powder, Italian seasoning, and black pepper; mix well.
  • Simmer uncovered, stirring occasionally, until orzo is creamy and veggies are tender (about 20 min).
  • (Optional) Stir in Parmesan, cream, greens, or lemon zest at the end for extra flavor.
  • Serve hot, garnished with parsley and more Parmesan if desired.
