- 1 tablespoon unsalted butter (1/2 ounce; 15 g), softened, divided
- 1 good- quality English muffin, split
- 1 slice good- quality Canadian bacon
- Nonstick cooking spray
- 1 large egg
- Kosher salt and freshly ground black pepper
- 1 slice American, cheddar, Swiss, or Jack cheese
Butter and toast both muffin halves in a skillet until golden, then set aside.
Brown Canadian bacon in the same skillet and place on the bottom muffin half.
Place a greased Mason jar lid in the skillet, crack in the egg, break the yolk, season, add water, cover, and steam until set.
Remove the egg from the mold, place it on the bacon, top with cheese, and close with the other muffin half.
Wrap the sandwich in foil, warm in the skillet for 2 minutes, then unwrap and serve.
