- 1 sheet (14 ounces) thawed, all-butter puff pastry, kept cold
- ½ pound thinly sliced ham (Black Forest, French style, or prosciutto)
- 1 tablespoon Dijon mustard
- 1 ¼ cups grated Swiss or Gruyere cheese
- 1 teaspoon herbes de Provence
- 1 egg (for egg wash)
- Fresh thyme leaves (for garnish)
Preheat oven to 400°F and line a baking sheet with parchment paper.
Keep puff pastry cold until ready to use.
On a lightly floured surface, roll pastry to 13½ x 11½ inches.
Cut into 4 equal squares and position each as a diamond.
For each diamond
Place 2 oz ham in center vertically
Spread 1 teaspoon Dijon mustard over ham

Fold horizontal points together to form a pocket, sealing with water.
