  • 4 tablespoons unsalted butter, melted
  • 1/2 cup creamy peanut butter
  • 1 (5-ounce) can evaporated milk (about 2/3 cup)
  • 2 large eggs, room temperature, lightly beaten
  • 3 tablespoons cornstarch
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 1 (9-inch) unbaked pie crust

Instructions
 

  • Preheat oven to 350°F
  • Mix melted butter (4 tbsp) with peanut butter (1/2 cup)
  • Add evaporated milk (2/3 cup) and 2 beaten eggs
  • Stir in cornstarch (3 tbsp), sugar (1 1/2 cups), and vanilla (1 tsp)
  • Pour into unbaked 9-inch pie crust
  • Bake 45-55 minutes until top forms a peanut butter cookie-like crust
  • Cool completely (2-3 hours) before slicing
  • Serve at room temperature, optionally with whipped cream
