  • Pour 1½ cups lite coconut milk into blender first.
  • Add 1 frozen banana.
  • Add 2 cups frozen pineapple chunks.
  • Add 2 tablespoons honey.
  • Add ½ teaspoon vanilla extract.
  • Start blender on lowest speed.
  • Gradually increase to high speed.
  • Use tamper to push ingredients into blades.
  • Blend for 30-60 seconds until smooth.
  • Check consistency - if too thick, add more coconut milk; if too thin, add more frozen fruit.
  • Pour into glasses and serve immediately.
